I'm using the stored maps feature of TB. When I go for a walk I'd like to
keep my "location" in the middle of the screen as I walk? Is it possible to show the tracked location in the center of the screen. Mobile GMaps has this option for stored maps and I was hoping TB would have the same too.

I have GPS on (green dot in top left and the red circle with my location in one corner of the map). When I press key5 nothing much happens. The only time key5 does anything is when there is one line of the header on top, then pressing the key5 gives me the second line with the time, .... , number of satellites and a *.

What I would like is for that red circle with the location to always be in the middle of the screen.

Check your settings, it sounds like you have 1-tile scroll enabled.
If so, try turning it off.

You are absolutely right, Rezza. When I uncheck this it works great keeping my position centered.

The next question: is there any way to change the zoom setting (zoom in / zoom out) by pressing some key combination. The only way I can find is to reload the atlas and choose another layer.

Yes, I do a "Load Atlas" and then have to select a layer.

I tried pressing 7 and 9 and nothing happens here either Smile. What can I try next?

Press key 7 longer, you should see list of layers.
If you have one layer only - nothing can change with easy zoom feature.
For easy zoom you should have atlas organized like maps in layers for particular scale/type.
Probably you don't have such atlas structure, or "easy zoom" is turned off.
Check settings again and atlas structure Smile

@Russell: When using MOBAC for atlas creation, you have to do the following to get the correct atlas structure for easy zoom:

Thanks so much @haddock, that's something I definitely did not do. I'm going to try it when I get some time and will post back.
